Pancakes with The Groovy Food Company

I’ve cut out bad fats and refined sugar recently so I hadn’t thought about Pancake Day until The Groovy Food Company challenged me to make healthier pancakes using their ingredients.

Organic Coconut Flour

Agave Nectar Amber and Mild/Agave Nectar Rich and Dark

An excellent alternative to refined white sugar and artificial sweeteners, agave nectar is 100% natural, cholesterol and fat free. With its low GI, it provides slow and steady energy release as opposed to refined sugars. You can use it on cereals, in hot drinks and pancakes of course!

With these wholesome ingredients to hand, I took to the kitchen and made these amazing pancakes. Overall, they were quick and easy and tasted fabulous. Initially, I worried that they would lack in flavour but the coconut flour added such a lovely sweetness that I didn’t even need much agave nectar. Plus, the blueberries and raspberries were a tasty additional topping.
